Stuffed Butternut Squash (Savory)
Ingredients
1 medium butternut squash, halved lengthwise & seeds removed
1 tbsp olive oil
Salt & black pepper
4–6 slices bacon, chopped
2 cups fresh spinach
½–¾ cup feta cheese, cubed or crumbled
½ tsp garlic powder (or 1 clove fresh garlic, minced)
¼ tsp chili flakes (optional)
Optional: drizzle of honey or maple syrup for balance
Instructions
Roast the squash
Preheat oven to 200°C / 400°F.
Brush squash halves with olive oil, season with salt & pepper.
Place cut-side down on a baking sheet.
Roast 35–45 minutes until tender.
Cook the bacon
While squash roasts, cook bacon in a skillet until crispy.
Remove bacon and set aside. Leave a little fat in the pan.
Wilt the spinach
Add garlic to the pan, cook 30 seconds.
Add spinach and cook until just wilted.
Stuff the squash
Flip roasted squash cut-side up.
Fill with spinach, feta, and crispy bacon.
Finish baking
Return to oven for 8–10 minutes until feta softens and lightly browns.
Serve
Add chili flakes or a light drizzle of honey/maple if desired.
