Creamy Italian Sausage Soup
Ingredients

1 lb Italian sausage (mild or spicy)

1 tbsp olive oil (if needed)

1 small onion, diced

2 cloves garlic, minced

3 cups potatoes, diced (russet or Yukon gold)

1 can (14.5 oz) diced tomatoes

4 cups chicken broth
-
1 cup heavy cream (or half-and-half)

1 tsp Italian seasoning
-
½ tsp paprika
-
Salt & black pepper, to taste

Fresh parsley or basil, chopped (for garnish)
Instructions

Brown sausage
In a pot over medium heat, cook sausage until browned. Break it into small pieces. Drain excess fat if needed. -
Sauté aromatics
Add onion to the pot and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds. -
Add potatoes & broth
Add diced potatoes, tomatoes, chicken broth, Italian seasoning, and paprika. Bring to a boil. -
Simmer
Reduce heat and simmer 15–20 minutes, until potatoes are tender. -
Make it creamy
Stir in heavy cream. Simmer another 5 minutes (do not boil). -
Season & serve
Adjust salt and pepper. Garnish with fresh herbs and serve warm.
