Lemon Ginger Chicken with Pineapple Mango Salsa
This vibrant, tropical-inspired dish features juicy, seared chicken coated in a sticky-sweet lemon-ginger glaze, paired with a fresh, colorful fruit salsa.

Lemon Ginger Chicken

1 lb chicken breasts, cut into bite-sized pieces

1 tbsp fresh ginger, grated

Zest of 1 lemon

¼ cup lemon juice

2 tbsp honey

1 tbsp soy sauce

1 tbsp olive oil

Pineapple Mango Salsa

½ cup diced pineapple
-
½ cup diced mango
-
¼ cup diced red onion
-
1 tbsp lime juice

Fresh cilantro, chopped (optional)

Coconut Rice (Optional Base)

1 cup jasmine or basmati rice
-
1 cup coconut milk
-
½ cup water
-
½ tsp salt
Spicy Mayo (Optional Drizzle)

¼ cup mayonnaise
-
1–2 tsp Sriracha (adjust to taste)

1 tsp lime juice
Instructions

Prepare the Coconut Rice: Rinse the rice thoroughly. In a saucepan, combine the rice, coconut milk, water, and salt. Bring to a boil, reduce the heat to low, cover, and simmer for about 15 minutes until the liquid is absorbed and the rice is tender. Remove from heat and let rest covered for 5 minutes.

Make the Lemon Ginger Glaze: In a small bowl, whisk together the grated ginger, lemon zest, lemon juice, honey, and soy sauce. Set aside.

Cook the Chicken: Heat olive oil in a skillet over medium heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Sear for 4 to 5 minutes until golden brown and cooked through. Pour the lemon-ginger glaze over the chicken and cook for another 2 to 3 minutes, stirring occasionally, until the glaze thickens and beautifully coats the meat.

Prepare the Salsa: In a mixing bowl, gently combine the diced pineapple, diced mango, red onion, lime juice, and fresh cilantro. Season with salt and pepper to taste.

Make the Spicy Mayo: Whisk together the mayonnaise, Sriracha, and lime juice in a small bowl until smooth.

Serve: Layer a base of coconut rice on a plate or bowl, top with the sticky lemon ginger chicken, spoon the fresh pineapple mango salsa generously over the top, and finish with a drizzle of spicy mayo.
