A sprinkle of fresh herbs and red pepper flakes adds the perfect finishing touch. It’s easy enough for a quick lunch but impressive enough for a weekend brunch or family dinner.

Ingredients

  • 8 slices thick white or brioche bread
  • 8–10 slices deli ham
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons melted butter
  • 1 garlic clove, minced
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes, optional
  • 1 tablespoon fresh thyme or parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a small baking dish.
  2. In a bowl, mix the softened cream cheese, mayonnaise, Dijon mustard, garlic, Italian seasoning, and black pepper until smooth.
  3. Spread the cream cheese mixture over one side of each bread slice.
  4. Place a layer of ham over four slices, then add mozzarella and cheddar cheese.
  5. Top with the remaining bread slices to create four thick sandwiches.
  6. Arrange the sandwiches snugly in the prepared baking dish.
  7. Brush the tops with melted butter and sprinkle with a little extra shredded cheese and red pepper flakes if desired.
  8. Bake for 18–22 minutes, until the bread is crisp and the cheese is completely melted.
  9. For an extra-golden top, broil for 1–2 minutes, watching carefully so it doesn’t burn.
  10. Remove from the oven, let rest for 3–5 minutes, then garnish with fresh thyme or parsley. Slice and serve warm.

Pro Tips

  • Use thick-cut bread so the sandwiches hold their shape.
  • Gruyère, Swiss, provolone, or Monterey Jack can be substituted for the cheese.
  • Add caramelized onions or sautéed mushrooms for extra flavor.
  • For the crispiest topping, finish briefly under the broiler.
  • Serve immediately while the cheese is hot, stretchy, and gooey.
