🥩 Ingredients

  • 1½ lb (680 g) beef sirloin or stew meat, cut into bite-sized pieces
  • 1½ lb baby potatoes, halved
  • 4 tbsp butter
  • 1 tbsp olive oil
  • 5 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt, or to taste
  • 1 tbsp chopped fresh parsley

👩‍🍳 Instructions

  1. Prepare the potatoes:
Wash the baby potatoes and cut larger ones in half. Boil them in salted water for about 8–10 minutes, just until slightly tender. Drain well.
  2. Season the beef:
Pat the beef dry with paper towels. Season with salt, black pepper, smoked paprika, onion powder, and Italian seasoning.
  3. Sear the beef:
Heat olive oil in a large skillet over medium-high heat. Add the beef in a single layer and sear for 2–3 minutes per side, until browned. Remove the beef and set aside.
  4. Brown the potatoes:
Add 2 tablespoons of butter to the same skillet. Add the potatoes cut-side down and cook for 5–7 minutes, turning occasionally, until golden and tender. Remove and set aside.
  5. Build the sauce:
Add the remaining butter and diced onion to the skillet. Cook for 2–3 minutes until softened. Add the minced garlic and cook for about 30 seconds.
  6. Deglaze:
Pour in the beef broth and Worcestershire sauce. Scrape the browned bits from the bottom of the pan—they add tons of flavor.
  7. Combine everything:
Return the beef and potatoes to the skillet. Toss everything together and simmer for 3–5 minutes, allowing the sauce to reduce and coat the beef and potatoes.
  8. Finish:
Sprinkle with fresh parsley and serve immediately with plenty of the garlic butter sauce.

🔥 Pro Tips

  • Pat the beef very dry before searing for a better crust.
  • Don’t overcrowd the skillet; cook the beef in batches if necessary.
  • Baby Yukon Gold or red potatoes work especially well.
  • For extra richness, add another tablespoon of butter at the very end.
  • A splash of Worcestershire sauce gives the beef a deeper, restaurant-style flavor.
