- 1¾ cups grated zucchini
- ⅔ cup cottage cheese
- ⅔ cup grated Parmesan cheese
- 2 large eggs

- ¼ tsp salt
- 2 tbsp chopped fresh parsley
- ½ cup shredded mozzarella cheese, optional
