Mini Meatloaf Muffins

Ingredients

1.5 lbs lean ground beef (or a mix of ground beef and ground pork)

1/2 cup breadcrumbs (or rolled oats)

1/3 cup milk

1 large egg

1/4 cup finely chopped onion

1/4 cup finely chopped green bell pepper

2 cloves garlic, minced

1 tsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried Italian seasoning (or parsley)

Glaze: 1/3 cup ketchup, 1 tbsp brown sugar, and 1 tsp apple cider vinegar (mixed together for topping)

Preheat and Prep: Preheat your oven to 375°F (190°C). Generously grease a 12-cup standard muffin tin with non-stick cooking spray.

Combine Base Ingredients: In a large bowl, mix together the breadcrumbs and milk, letting them sit for a couple of minutes to absorb the liquid.

Add Meat and Seasonings: Add the ground beef, egg, chopped onion, bell pepper, minced garlic, Worcestershire sauce, salt, black pepper, and Italian seasoning to the bowl. Gently mix with your hands until just combined (avoid overmixing to keep the meat tender).

Fill the Muffin Tin: Divide the meat mixture evenly among the 12 muffin cups, pressing down gently so they fill each cup and mound slightly at the top.

Add the Glaze: In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar. Spoon a small amount of the glaze over the top of each mini meatloaf and spread evenly.
