Ingredients

  • Chicken: 2 large chicken breasts (cut in half horizontally to make 4 thin cutlets)

  • Filling:

    • 1 cup small broccoli florets (lightly steamed and chopped)

    • ½ cup cream cheese (softened) or ricotta cheese

    • ½ cup shredded cheddar or mozzarella cheese

  • Seasoning:

    • 1 tsp garlic powder

    • 1 tsp onion powder

    • 1 tsp paprika

    • Salt and black pepper, to taste

  • Topping:

    • ¾ cup shredded cheddar cheese (for melting on top)

    • 1 tbsp fresh parsley, finely chopped (for garnish)

    • 1 tbsp olive oil or melted butter (for searing/brushing)

Step-by-Step Instructions

  1. Prep the Chicken:

    • Place the chicken cutlets between sheets of plastic wrap and gently pound them to an even ¼-inch thickness using a meat mallet.

    • Season both sides with salt, pepper, garlic powder, onion powder, and paprika.

  2. Make the Filling:

    • In a small bowl, mix the softened cream cheese (or ricotta), half of the shredded cheese, and the steamed chopped broccoli.

  3. Roll the Chicken:

    • Spoon an equal portion of the broccoli-cheese mixture onto the lower end of each chicken cutlet.

    • Roll the chicken tightly around the filling and secure the ends with toothpicks if needed.

  4. Cook / Bake:

    • Option A (Skillet & Bake): Sear the rolls in an oven-safe skillet with a bit of olive oil over medium-high heat for 2–3 minutes per side until golden brown.

    • Option B (Bake only): Place the rolls seam-side down in a greased baking dish.

    • Bake in a preheated oven at 375°F (190°C) for 20–25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

  5. Top with Cheese & Garnish:

    • In the last 3 minutes of baking, sprinkle the remaining shredded cheddar cheese over the top of the chicken rolls and return to the oven until melted and bubbly.

    • Garnish with freshly chopped parsley before slicing and serving.
