🛒 Ingredients
- 1 box (1 oz) sugar-free instant vanilla pudding mix
- 2 cups cold unsweetened almond milk or skim milk
- 1 cup nonfat Greek yogurt
- 1 scoop vanilla protein powder
- 1 tsp vanilla extract
- 2–3 medium bananas, sliced
- 1 cup crushed graham crackers
- ½ cup light whipped topping
- 1–2 tbsp honey or zero-calorie sweetener, optional
- Pinch of salt
👩🍳 Instructions
- In a large bowl, whisk the sugar-free vanilla pudding mix with cold milk for about 2 minutes until it begins to thicken.
- Add the Greek yogurt, vanilla protein powder, vanilla extract, and a small pinch of salt.
- Whisk until completely smooth and creamy. Taste and add a little sweetener if desired.
- Let the pudding mixture rest in the refrigerator for about 5–10 minutes to thicken further.
- Prepare 4–5 small dessert cups or containers.
- Add a layer of the creamy protein pudding to the bottom of each cup.
- Add a layer of crushed graham crackers.
- Add a few slices of fresh banana.
- Repeat the pudding, graham cracker, and banana layers until the cups are nearly full.
- Finish each cup with a spoonful of light whipped topping and a sprinkle of crushed graham crackers.
- Cover and refrigerate for at least 1–2 hours before serving so the flavors can blend and the dessert becomes nicely chilled.
⭐ Tips
For the best texture, use thick nonfat Greek yogurt and serve the cups well chilled. If you prefer a softer dessert, prepare them several hours ahead so the graham cracker layers have time to absorb some of the creamy pudding.
For meal prep, keep the cups refrigerated and add the banana shortly before serving if you want the slices to stay fresher.
