Ingredients

Crust Layer

  • 1.5 cups rolled oats (or crushed graham crackers/cookies)

  • 2 tablespoons melted butter

  • 1 tablespoon honey or maple syrup

  • A pinch of salt

Cheesecake Filling Layer

  • 8 oz cream cheese, softened at room temperature

  • 1 cup heavy whipping cream (or whipped topping)

  • 1/2 cup powdered sugar

  • 1 teaspoon vanilla extract

Fruit Topping Layer

  • 1 cup strawberry jam, preserves, or fresh strawberry compote

Instructions

  1. Prepare the Crust:

    • If using oats, pulse them in a food processor until coarsely ground, or keep them whole for extra texture.

    • Mix the oats (or crushed cookies) with melted butter, sweetener, and a pinch of salt. Press about 2 tablespoons of the mixture firmly into the bottom of each small glass jar.

  2. Make the Cheesecake Filling:

    • In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and fluffy.

    • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream and vanilla extract into the cream cheese mixture until smooth and uniform.

  3. Assemble the Jars:

    • Spoon or pipe the cheesecake filling generously over the crust layer in each jar, filling them up to leave a small space at the top.

  4. Add the Topping:

    • Top each jar with a generous spoonful of strawberry jam or compote, spreading it gently across the cheesecake layer.

  5. Chill and Serve:

    • Cover the jars with their lids and refrigerate for at least 1–2 hours to set before serving. Enjoy straight from the jar with a spoon!
