Seed and Nut Energy Disks

Description

These wholesome, nutrient-dense energy disks are packed with a wholesome variety of crunchy nuts and seeds held together by a sweet, natural binder. They make a fantastic, portable snack to boost your energy throughout the day.

Ingredients

  • 1 cup raw almonds, roughly chopped

  • 1/2 cup pumpkin seeds (pepitas)

  • 1/2 cup sunflower seeds

  • 1/4 cup sesame seeds

  • 1/3 cup honey or maple syrup

  • 2 tbsp brown sugar or coconut sugar

  • 1 tbsp unsalted butter or coconut oil

  • A pinch of salt

Instructions

  1. Toast the Nuts and Seeds: Preheat your oven to 325°F (165°C). Spread the almonds, pumpkin seeds, sunflower seeds, and sesame seeds on a baking sheet and toast for 8 to 10 minutes until lightly fragrant. Transfer them to a large mixing bowl.

  2. Make the Binder Syrup: In a small saucepan, combine the honey (or maple syrup), brown sugar, butter (or coconut oil), and salt. Cook over medium heat, stirring constantly, until the mixture bubbles and the sugar completely dissolves (about 3 to 4 minutes).

  3. Combine: Pour the hot syrup mixture over the toasted nuts and seeds. Stir quickly and thoroughly until all the dry ingredients are evenly coated and sticky.

  4. Shape the Disks: Press the warm mixture tightly into greased round mold pans or shape them into compact round disks on a parchment-lined baking sheet using a round cutter or your hands.

  5. Cool and Set: Let the disks cool completely at room temperature until they harden and hold their shape. Store them in an airtight container between layers of parchment paper.
