1.5 cups fresh blueberries (divided)

1 cup cottage cheese or ricotta cheese (blended smooth)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

Preheat and Prep: Preheat your oven to 375°F (190°C). Lightly grease small individual oven-safe ramekins or glass baking dishes.

Blend the Base: In a blender or food processor, combine the smooth cottage cheese (or ricotta), eggs, honey, vanilla extract, and flour until completely smooth and creamy.

Layer the Blueberries: Place a handful of fresh blueberries at the bottom of each prepared ramekin.

Pour the Batter: Pour the creamy custard mixture over the blueberries until the ramekins are mostly full. Top with a few extra fresh blueberries.
