zucchini casserole. I made this last night as a side dish. It was SO good 🤤

. This recipe made 6 servings (as a side). Each serving is 1 point. It’s so so yummy, and satisfying too. Especially with the melty cheese and crunchy bread crumbs on top.

Ingredients
2 packs of mushrooms
2 zucchini
1 container of fresh spinach
Panko bread crumbs 1/2 cup
Shredded mozzarella cheese 1/2 cup
I can believe it’s not butter spray

Instructions
Saute your sliced mushrooms and spinach with salt, lemon pepper, and onion powder. Then get your baking dish (spray with cooking spray), then layer semi thick slices of raw zucchini, mushroom/spinich mixture, and mozz cheese. I did two layers. On top cover with panko bread crumbs and drizzle olive oil. Bake uncovered for 30 min on 350.
