Yummy Pies – makes 4 small pies (probably more)

1 red onion finely chopped.
Few sprigs of thyme – leaves stripped and chopped
6 best pork sausages (c. 400gms), or packaged sausage meat
Pinch of ground allspice
Freshly ground nutmeg.
1 egg beaten
150gm trex / lard
500gm plain flour
Sweat onions in some olive oil for c. 3mins then add thyme and cook for another 2 – 3 mins. Take off heat and cool.
Take meat out of sausages (or use packaged sausage meat) and mix with onion/thyme, allspice and nutmeg.
Sift flour into bowl and make hollow in centre.
Put trex / lard into 250ml water. Bring to boil. Pour into flour and mix with knife then hands when cool enough. Use clingfilm to keep warm and moist.
Cut dough into 4 portions. Cut 1/4 off each portion and cover in clingfilm.
Roll out and work each portion of dough into ramakin or container. Leave an allowance at the top.
Brush beaten egg onto the top rim of dough ready for its lid.
Fill each pie with sausage meat mix.
Top with a little apple sauce.
Roll out the top and put on top of pie. Pinch together to make a wave around the join.
Put point of knife in centre of too and revolve pie to make a hole in the top.
Bake in the airfryer for 22 mins at 160°. Remove pies from airfryer and remove from containers, brush top and sides with beaten egg and return them (without containers) to the air fryer and bake at 160° for another 15 mins.
