AIR FRYER BANANA NUT BREAD

EQUIPMENT:

  • Air Fryer
  • Mini Loaf Pans or 7 inch round cake pan

INGREDIENTS:

  • 3 bananas mashed and overripe (about 1 ¼ cups mashed)
  • 2 large eggs
  • ½ cup unsalted butter softened, not melted
  • 1 teaspoon vanilla extract
  • ¾ cup sugar
  • ¼ cup brown sugar
  • 1 ½ cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt

Optional

  • ⅓ cup walnuts chopped

INSTRUCTIONS:

  1. In a medium bowl, mash the bananas. You can use your hands, a potato masher, or a fork to do this. Make sure any large chunks or pieces of the banana are finely mashed. Add in the eggs and vanilla, mixing to combine all of the ingredients.  
  2. In a large mixing bowl, cream the softened butter and the sugars. Combine together until it looks like wet sand.
  3. Add the banana mixture to the butter and sugar mixture. Mix together on low speed or with a fork or whisk until the ingredients are combined.
  4. Gradually stir in the dry ingredients of flour, salt, and baking soda, until a smooth and creamy batter forms. Stir in the chopped nuts or raisins if using.
  5. Transfer the batter to small baking pans that have been sprayed with nonstick cooking spray and then set aside while the air fryer is preheating.Preheat the air fryer to 330 degrees for 3-5 minutes.
  6. Once the air fryer is preheated, Place the pans in the center of the air fryer basket. Air fry at 330 degrees F for 20-25 minutes, until a toothpick is inserted and can be removed clean.
  7. Let bread cool and then remove from pans. 

NOTES:

This recipe makes 3-4 mini loaves, 1- seven inch round loaf,  The smaller pans allow the bread to cook much faster, so cooking times may need to be adjusted.
If bananas aren’t well mashed, and incorporated into the batter well, the center may not cook properly.
If you are using a cake pan or loaf pans that aren’t mini, only fill them half way with the batter.
If bread begins to burn on top, but the center is still uncooked, you can top your bread with aluminum foil, and then return to the air fryer for another 5-10 minutes until a toothpick or skewer comes out clean when inserted in the center of your bread.
