Air fryer bread pudding

Ingredients:

  • 4 cups of bread cubes (use any bread of your choice; stale bread works well)
  • 2 eggs
  • 1 1/2 cups milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup raisins or chopped nuts (optional)

Instructions:

  1. Prepare Bread Cubes: Cut the bread into cubes and set aside. If your bread is fresh, you can dry it out a bit by leaving the cubes uncovered for a few hours or toasting them lightly.
  2. Prepare Custard Mixture: In a mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and nutmeg until well combined. If you’re using raisins or nuts, you can add them to the custard mixture.
  3. Combine Bread and Custard: Place the bread cubes into the custard mixture and gently fold until all the cubes are coated. Let the mixture sit for about 15-20 minutes, allowing the bread to absorb the custard.
  4. Preheat Air Fryer: Preheat the air fryer to 320°F (160°C) for a few minutes.
  5. Prepare Baking Dish: Lightly grease a baking dish that fits into your air fryer basket. Transfer the bread and custard mixture into the baking dish.
  6. Air Frying: Place the baking dish into the air fryer basket. Air fry for about 15-20 minutes, checking at the 15-minute mark for doneness. The pudding should be set and slightly golden on top.
  7. Check for Doneness: Use a toothpick or knife to check the center of the bread pudding. If it comes out clean, the pudding is ready.
  8. Serve: Once done, remove the bread pudding from the air fryer and let it cool for a few minutes. Serve warm, either on its own or with a dollop of whipped cream or a drizzle of caramel sauce.

This recipe is quite versatile, so feel free to customize it with your preferred spices or add fruits like diced apples or berries for added flavor.
