Beef and Cheese Chimichanga

Beef and cheese chimichangas are a flavorful Tex-Mex dish featuring seasoned ground beef and melted cheese, all wrapped in a crispy tortilla. Here’s a recipe to make beef and cheese chimichangas:

Ingredients:

  • 1 pound (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (or Mexican blend cheese)
  • 6 large flour tortillas
  • Vegetable oil, for frying
  • Optional toppings: salsa, guacamole, sour cream, chopped cilantro, diced tomatoes

Instructions:

  1. In a large skillet, cook the ground beef over medium heat until browned and cooked through, breaking it up with a spoon as it cooks.
  2. Add the diced onion and minced garlic to the skillet with the cooked beef. Cook for 2-3 minutes, or until the onion is softened.
  3. Stir in the ground cumin, chili powder, paprika, salt, and pepper. Cook for an additional minute to allow the spices to toast and become fragrant.
  4. Remove the skillet from the heat and stir in the shredded cheddar cheese until melted and evenly combined with the beef mixture. Set aside.
  5. Lay out the flour tortillas on a clean work surface. Divide the beef and cheese mixture evenly among the tortillas, placing it in the center of each tortilla.
  6. Fold the sides of each tortilla over the filling, then roll it up tightly to form a chimichanga.
  7. Heat vegetable oil in a large skillet or deep fryer to 350°F (180°C).
  8. Carefully place the chimichangas seam-side down into the hot oil, a few at a time, and fry until golden brown and crispy, about 2-3 minutes per side.
  9. Use tongs to transfer the fried chimichangas to a plate lined with paper towels to drain excess oil.
  10. Serve the beef and cheese chimichangas hot, topped with your favorite toppings such as salsa, guacamole, sour cream, chopped cilantro, and diced tomatoes.
