Ingredients:
1 lb ground beef
1 cup bell peppers, sliced (mixed colors)
1 cup cooked rice (white or brown)
2 tbsp soy sauce
1 tbsp sesame oil (or vegetable oil)
2 cloves garlic, minced
1 tsp ginger, minced (optional)
Salt and pepper to taste
Green onions, sliced (for garnish)
Directions:
In a large skillet, heat sesame oil over medium-high heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
Add sliced bell peppers, garlic, and ginger (if using) to the skillet. Cook for about 5 minutes until peppers are tender.
Stir in soy sauce, salt, and pepper. Cook for an additional 2 minutes.
Serve the beef mixture over cooked rice and garnish with sliced green onions
