🥦🥬 Broccoli Cauliflower Cottage Cheese Bake

🧾 Ingredients

  • 3 cups broccoli florets

  • 3 cups cauliflower florets

  • 1 cup low-fat cottage cheese (blended smooth)

  • 3 large eggs

  • ½ cup shredded cheese (cheddar, mozzarella, or mix)

  • ¼ cup milk

  • 2 tbsp olive oil or melted butter

  • ½ tsp salt (adjust to taste)

  • ½ tsp black pepper

  • ½ tsp garlic powder (or 1 clove minced garlic)

  • ½ tsp onion powder (optional)

  • ½ tsp paprika or chili flakes (optional)

  • 2 tbsp grated Parmesan (for topping, optional)


👩‍🍳 Instructions

1️⃣ Prep Vegetables

  • Steam or boil broccoli and cauliflower for 4–5 minutes until just tender

  • Drain well and let cool slightly

  • Chop into bite-size pieces

2️⃣ Preheat Oven

  • Preheat to 180°C / 350°F

  • Grease a baking dish (8×8 or similar)

3️⃣ Make the Creamy Mixture

  • In a bowl, whisk together:

    • Blended cottage cheese

    • Eggs

    • Milk

    • Olive oil

    • Salt, pepper, garlic powder, onion powder, paprika

4️⃣ Assemble

  • Add broccoli and cauliflower to the baking dish

  • Pour the cottage cheese mixture over vegetables

  • Gently mix

  • Sprinkle shredded cheese evenly on top

  • Add Parmesan if using

5️⃣ Bake

  • Bake uncovered for 35–40 minutes

  • Top should be golden and set

  • A knife inserted in the center should come out clean

6️⃣ Rest & Serve

  • Let rest 10 minutes before slicing

  • Serve warm
