Cajun Sausage and Ricepe

INGREDIENTS

  • 14 ounces andouille sausage
  • 1 medium yellow onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 15 ounces canned diced tomatoes
  • 1 cup long grain white rice
  • 1 ½ cups chicken broth
  • 2 teaspoons cajun seasoning see notes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cracked pepper

INSTRUCTIONS

    • Slice the sausage into thin rounds. Dice the onion and bell peppers and mince the garlic.
    • Add the oil and butter to a 12 inch skillet over medium heat. Once hot, add the sausage and cook until browned, stirring occasionally, about 4 minutes.
    • Add the onion and peppers to the skillet and continue cooking, stirring occasionally, for 4-5 minutes until vegetables begin to soften.
    • Add the garlic to the skillet and cook until fragrant, about 1 minute.
  • Add the canned tomatoes (do not drain), rice, chicken broth, cajun seasoning, garlic powder, onion powder, and pepper to the skillet and stir to combine.
  • Bring to a boil, cover the pan with a tight fitting lid, and simmer for 20 minutes or until the liquid has evaporated and the rice is tender.
  • Remove from the heat and let sit covered for 5 minutes.
  • Remove the lid and fluff the rice with a fork and stir to combine. Taste and add additional cajun seasoning or salt, if desired.

TIPS & NOTES:

We use Tony Chachere’s or Slap Ya Mama seasoning. Both are quite salty, so we don’t normally add additional salt. If your seasoning blend is less salty, you may want to add salt during the cooking process. Otherwise, salt to taste after it’s cooked. 

If you’re sensitive to spice, you may want to use smoked sausage in place of andouille sausage. Andouille sausage can be fairly spicy. This is too spicy for my kids with andouille sausage, but perfect for them with smoked sausage.
