🧀 Cheesy Chicken, Spinach & Mushroom Casserole
Ingredients

2–3 cups cooked chicken (cubed or shredded)

2 cups fresh mushrooms (sliced)

2 cups fresh spinach (or 1 cup frozen, thawed & drained)

1½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup heavy cream (or half-and-half)

2 cloves garlic (minced)

1 small onion (finely chopped)

1 tbsp olive oil or butter

1 tsp Italian seasoning

Salt & black pepper (to taste)

Optional: red pepper flakes or paprika
Instructions

Preheat oven to 375°F (190°C) and lightly grease a baking dish.

Sauté vegetables:
Heat oil/butter in a skillet. Cook onion until soft, add garlic, then mushrooms. Cook until mushrooms release moisture. -
Add spinach:
Stir in spinach until wilted (or warmed through if frozen). Season with salt, pepper, and Italian seasoning. -
Assemble:
Spread chicken evenly in the baking dish. Top with the veggie mixture. -
Add cream & cheese:
Pour cream over everything. Sprinkle mozzarella and Parmesan evenly on top. -
Bake uncovered for 25–30 minutes, until bubbly and golden.

Optional: Broil 2–3 minutes for extra browning.
