Chicken Spaghetti Pepperanata:
my dad’s recipe from Tangier, Morocco. I tweaked it to fit my WW points. I made this for 4 people and it was 4 points each for the meal.
-
I sauteed green pepper (about 1/2 cup and onion sliced (about 1/2 cup) and 2 chopped garlic cloves in a spray of olive oil.
-
Removed the vegetables and added chicken breast (I used 6oz) cut up into small bite size pieces.
-
Added the veggies and added chopped cilantro back into the pan and added Rao’s Tomato Basil sauce (1 cup – about 1 pt per serving).
-
Served on whole wheat linguine (I used 2 cups – 2pts per serving) and sprinkled with 1/4 cup parmesan. Definitely got my spaghetti fix with very few personal points.
