Creamy Beef & Tomato Soup

Ingredients

  • 1 lb (450 g) ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 can (14–15 oz) diced tomatoes

  • 2 cups beef broth

  • 1 cup milk or half-and-half

  • ½ cup heavy cream (optional, for extra creaminess)

  • 1 cup shredded cheese (cheddar or Mexican blend)

  • 1 tsp paprika

  • 1 tsp cumin

  • ½ tsp black pepper

  • Salt to taste

  • 1 tbsp olive oil or butter

  • Fresh parsley or cilantro, chopped (for garnish)


Instructions

  1. Cook the beef
    Heat oil or butter in a pot over medium heat. Add ground beef and onion. Cook until beef is browned and onion is soft. Drain excess grease.

  2. Add flavor
    Stir in garlic, paprika, cumin, salt, and pepper. Cook for 30 seconds until fragrant.

  3. Build the soup
    Add diced tomatoes (with juice) and beef broth. Bring to a gentle simmer and cook for 10 minutes.

  4. Make it creamy
    Lower heat. Stir in milk and cream. Slowly add shredded cheese, stirring until melted and smooth.

  5. Finish & serve
    Taste and adjust seasoning. Garnish with fresh herbs and serve hot.
