Creamy Beef & Tomato Soup
Ingredients

1 lb (450 g) ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (14–15 oz) diced tomatoes

2 cups beef broth

1 cup milk or half-and-half

½ cup heavy cream (optional, for extra creaminess)

1 cup shredded cheese (cheddar or Mexican blend)

1 tsp paprika
-
1 tsp cumin
-
½ tsp black pepper

Salt to taste

1 tbsp olive oil or butter

Fresh parsley or cilantro, chopped (for garnish)
Instructions

Cook the beef
Heat oil or butter in a pot over medium heat. Add ground beef and onion. Cook until beef is browned and onion is soft. Drain excess grease. -
Add flavor
Stir in garlic, paprika, cumin, salt, and pepper. Cook for 30 seconds until fragrant. -
Build the soup
Add diced tomatoes (with juice) and beef broth. Bring to a gentle simmer and cook for 10 minutes. -
Make it creamy
Lower heat. Stir in milk and cream. Slowly add shredded cheese, stirring until melted and smooth. -
Finish & serve
Taste and adjust seasoning. Garnish with fresh herbs and serve hot.
