Creamy Garlic Salmon with Roasted Potatoes & Broccoli 🍽️
Ingredients (2–3 servings)
For Salmon

2 salmon fillets
-
1 tbsp olive oil
-
Salt & black pepper (to taste)
For Creamy Garlic Sauce
-
1 tbsp butter
-
4 cloves garlic (minced)
-
1 cup fresh cream (or cooking cream)
-
½ cup chicken broth (optional, for thinner sauce)
-
¼ cup grated Parmesan cheese
-
1 tsp lemon juice
-
1 tsp dried parsley or fresh chopped parsley
-
Salt & pepper (to taste)
For Roasted Vegetables
-
2 medium potatoes (cubed)
-
1 cup broccoli florets
-
1–2 tbsp olive oil
-
Salt, pepper
-
½ tsp garlic powder (optional)
Method
1️⃣ Roast Vegetables

Preheat oven to 200°C.

Toss potatoes & broccoli with olive oil, salt, pepper, garlic powder.

Bake for 25–30 minutes until golden and tender.
2️⃣ Cook Salmon

Heat olive oil in a pan on medium heat.
-
Season salmon with salt & pepper.
-
Cook 3–4 minutes per side until golden.

Remove salmon and keep aside.
3️⃣ Make Creamy Garlic Sauce

In the same pan, melt butter.
-
Add garlic and sauté for 30 seconds.

Add cream & chicken broth, simmer 2–3 minutes.

Stir in Parmesan, lemon juice, parsley, salt & pepper.

Cook until sauce thickens.
4️⃣ Combine
-
Place salmon back in pan, spoon sauce over it.
-
Simmer 2 minutes.
Serve
-
Plate salmon with roasted potatoes & broccoli.

Pour extra sauce on top 😋
