Creamy Garlic Salmon with Roasted Potatoes & Broccoli 🍽️

Ingredients (2–3 servings)

For Salmon

  • 2 salmon fillets

  • 1 tbsp olive oil

  • Salt & black pepper (to taste)

For Creamy Garlic Sauce

  • 1 tbsp butter

  • 4 cloves garlic (minced)

  • 1 cup fresh cream (or cooking cream)

  • ½ cup chicken broth (optional, for thinner sauce)

  • ¼ cup grated Parmesan cheese

  • 1 tsp lemon juice

  • 1 tsp dried parsley or fresh chopped parsley

  • Salt & pepper (to taste)

For Roasted Vegetables

  • 2 medium potatoes (cubed)

  • 1 cup broccoli florets

  • 1–2 tbsp olive oil

  • Salt, pepper

  • ½ tsp garlic powder (optional)


Method

1️⃣ Roast Vegetables

  1. Preheat oven to 200°C.

  2. Toss potatoes & broccoli with olive oil, salt, pepper, garlic powder.

  3. Bake for 25–30 minutes until golden and tender.

2️⃣ Cook Salmon

  1. Heat olive oil in a pan on medium heat.

  2. Season salmon with salt & pepper.

  3. Cook 3–4 minutes per side until golden.

  4. Remove salmon and keep aside.

3️⃣ Make Creamy Garlic Sauce

  1. In the same pan, melt butter.

  2. Add garlic and sauté for 30 seconds.

  3. Add cream & chicken broth, simmer 2–3 minutes.

  4. Stir in Parmesan, lemon juice, parsley, salt & pepper.

  5. Cook until sauce thickens.

4️⃣ Combine

  • Place salmon back in pan, spoon sauce over it.

  • Simmer 2 minutes.


Serve

  • Plate salmon with roasted potatoes & broccoli.

  • Pour extra sauce on top 😋
