๐ฅ Creamy Garlic Salmon with Veggies
๐งพ Ingredients
For the salmon
2โ3 salmon fillets
Salt & black pepper (to taste)
1 tsp paprika (optional)
1 tbsp olive oil
1 tbsp butter
For the creamy sauce
3 cloves garlic (minced)
1 cup heavy cream
ยผ cup chicken or vegetable broth
ยผ cup grated Parmesan cheese
1 tsp Dijon mustard (optional)
1 tsp dried thyme or parsley
Fresh parsley (for garnish)
For the sides
2 cups baby potatoes (halved)
1ยฝ cups broccoli florets
Olive oil
Salt & pepper
๐ฉโ๐ณ Instructions
1๏ธโฃ Roast the vegetables
Preheat oven to 200ยฐC / 400ยฐF
Toss potatoes with olive oil, salt, and pepper
Roast for 20 minutes
Add broccoli, drizzle with a little more oil, and roast 10โ15 more minutes until golden
2๏ธโฃ Cook the salmon
Season salmon with salt, pepper, and paprika
Heat olive oil + butter in a pan over medium heat
Cook salmon 4โ5 minutes per side until golden
Remove salmon from pan and set aside
3๏ธโฃ Make the creamy sauce
In the same pan, add garlic and cook 30 seconds
Pour in broth and cream, stir well
Add Parmesan, mustard, and herbs
Simmer 3โ5 minutes until slightly thick
Taste and adjust seasoning
4๏ธโฃ Combine & serve
Return salmon to the pan
Spoon sauce over the top
Simmer 2 minutes
Serve with roasted potatoes and broccoli
Garnish with fresh parsley ๐ฟ
โญ Tips
You can swap cream for half-and-half to make it lighter
Lemon juice adds great flavor if you like a fresh taste
Works well with rice or mashed potatoes too
