Creamy Italian Sausage Soup

Ingredients

  • 1 lb Italian sausage (mild or spicy)

  • 1 tbsp olive oil (if needed)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 3 cups potatoes, diced (russet or Yukon gold)

  • 1 can (14.5 oz) diced tomatoes

  • 4 cups chicken broth

  • 1 cup heavy cream (or half-and-half)

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt & black pepper, to taste

  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Brown sausage
    In a pot over medium heat, cook sausage until browned. Break it into small pieces. Drain excess fat if needed.

  2. Sauté aromatics
    Add onion to the pot and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds.

  3. Add potatoes & broth
    Add diced potatoes, tomatoes, chicken broth, Italian seasoning, and paprika. Bring to a boil.

  4. Simmer
    Reduce heat and simmer 15–20 minutes, until potatoes are tender.

  5. Make it creamy
    Stir in heavy cream. Simmer another 5 minutes (do not boil).

  6. Season & serve
    Adjust salt and pepper. Garnish with fresh herbs and serve warm.
