For the Cake

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup allulose or erythritol (granular)
  • 3 large eggs, room temperature
  • 1 tbsp lemon zest
  • 1 tbsp lime zest
  • 2 tbsp lemon juice
  • 1 tbsp lime juice
  • ½ cup unsweetened almond milk
  • 1 tsp vanilla extract

For the Citrus Glaze

  • ½ cup powdered allulose/erythritol
  • 1 tbsp lemon juice
  • 1 tbsp lime juice
  • 1–2 tsp water if needed (for thinning)
  • Extra zest for sprinkling

👩‍🍳 Instructions

1️⃣ Make the Batter

In a bowl, whisk almond flour, coconut flour, baking powder, and salt.
In another bowl, cream softened butter and sweetener until light and fluffy.
Beat in eggs one at a time.
Add lemon zest, lime zest, juices, and vanilla.
Slowly mix in dry ingredients and almond milk.
Your batter will be thick, creamy, and fragrant.


2️⃣ Bake

Pour batter into a greased loaf pan.
Bake at 350°F (175°C) for 45–55 minutes, or until a toothpick comes out clean.
