W/W Double chocolate mug muffin – 3 point
1 egg free range
3 tbsp almond flour
1/2 tbsp cocoa powder
1 tbsp chocolate chips
Peel and smash the banana into a small bowl with the back of a fork or a pastry cutter.
Crack the egg into the bowl and mix it in.
Add the almond flour, cocoa powder, and chocolate chips and stir.
Spray a microwave-safe mug or dish (I used two small dishes so I could make one for my preschooler!) with non-stick oil.
Pour the batter into the mug or dishes.
Microwave for 90 seconds on high if you’re using shallower dishes.
If you’re using a deeper mug, after 90 seconds, stop and microwave in 30 second bursts until done (will take around 2 1/2 minutes).
Wait a minute or two if you can and enjoy!
