Greek-Style Beef and Zucchini Rice Bowl
Ingredients
For the Beef
1 lb (450 g) ground beef (or halal beef)
1 tbsp olive oil
1 small onion, finely diced
2 cloves garlic, minced
1 tsp dried oregano
½ tsp paprika
Salt and black pepper, to taste
For the Zucchini
2 medium zucchinis, diced
1 tsp olive oil
Pinch of salt and black pepper
For the Rice Bowl
2 cups cooked rice or quinoa
½ cup crumbled feta cheese
2 tbsp chopped fresh parsley
2 tbsp tzatziki sauce (optional)
Lemon wedges, for serving
Directions
Cook the Beef
Heat olive oil in a skillet over medium heat. Sauté onions until translucent, then add garlic and cook for 30 seconds. Add ground beef, oregano, paprika, salt, and pepper. Cook until beef is browned and fully cooked. Drain excess fat if necessary.
Cook the Zucchini
In another skillet, heat olive oil over medium heat. Add diced zucchini, season with salt and pepper, and sauté for 5–7 minutes until tender.
Assemble the Bowls
Divide cooked rice or quinoa into serving bowls. Top with beef, sautéed zucchini, crumbled feta, and chopped parsley.
Serve
Add a dollop of tzatziki sauce and a lemon wedge on the side. Serve warm.
