Grilled Chicken Avocado Salad
Ingredients
Chicken

2 boneless, skinless chicken breasts

2 tbsp olive oil

1 tsp paprika

1 tsp garlic powder
-
½ tsp cumin
-
Salt & black pepper to taste

Juice of ½ lime (optional)
Salad

2 ripe avocados, diced
-
1½ cups cherry tomatoes, halved
-
¼ cup red onion, finely chopped (optional)
-
¼–½ cup fresh cilantro, chopped
-
2 cups mixed greens or romaine lettuce
Dressing
-
2–3 tbsp olive oil
-
Juice of 1 lime (or lemon)
-
½ tsp honey (optional)
-
Salt & pepper to taste
Instructions

Season the chicken

Rub chicken with olive oil, paprika, garlic powder, cumin, salt, pepper, and lime juice.

Cook the chicken

Grill or pan-sear over medium heat for about 5–7 minutes per side, until cooked through.

Let rest for 5 minutes, then slice.

Prepare the salad

In a large bowl, gently combine avocados, tomatoes, onion, cilantro, and greens.

Make the dressing

Whisk olive oil, lime juice, honey, salt, and pepper.

Assemble

Add sliced chicken on top of the salad.

Drizzle with dressing and toss lightly.
