Grilled Chicken Avocado Salad

Ingredients

Chicken

  • 2 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • ½ tsp cumin

  • Salt & black pepper to taste

  • Juice of ½ lime (optional)

Salad

  • 2 ripe avocados, diced

  • 1½ cups cherry tomatoes, halved

  • ¼ cup red onion, finely chopped (optional)

  • ¼–½ cup fresh cilantro, chopped

  • 2 cups mixed greens or romaine lettuce

Dressing

  • 2–3 tbsp olive oil

  • Juice of 1 lime (or lemon)

  • ½ tsp honey (optional)

  • Salt & pepper to taste


Instructions

  1. Season the chicken

    • Rub chicken with olive oil, paprika, garlic powder, cumin, salt, pepper, and lime juice.

  2. Cook the chicken

    • Grill or pan-sear over medium heat for about 5–7 minutes per side, until cooked through.

    • Let rest for 5 minutes, then slice.

  3. Prepare the salad

    • In a large bowl, gently combine avocados, tomatoes, onion, cilantro, and greens.

  4. Make the dressing

    • Whisk olive oil, lime juice, honey, salt, and pepper.

  5. Assemble

    • Add sliced chicken on top of the salad.

    • Drizzle with dressing and toss lightly.
