Grilled Chicken Salad with Avocado & Herb Dressing
Ingredients
2 grilled chicken breasts, sliced
4 cups mixed greens (spinach, arugula, romaine)
1 ripe avocado, sliced
½ cup cherry tomatoes, halved
¼ cucumber, thinly sliced
¼ red onion, sliced
2 tbsp olive oil
Salt & black pepper, to taste
For the Herb Dressing:
1 ripe avocado
¼ cup Greek yogurt
2 tbsp olive oil
Juice of 1 lemon
1 garlic clove
2 tbsp fresh parsley
1 tbsp fresh dill or basil
Salt & pepper, to taste
Directions
Make the dressing: Blend avocado, yogurt, olive oil, lemon juice, garlic, and herbs until smooth and creamy. Adjust salt and pepper to taste.
Assemble the salad: Arrange greens on a large platter. Top with chicken, avocado slices, tomatoes, cucumber, and onion.
Dress & serve: Drizzle herb dressing over the salad or serve it on the side. Enjoy immediately while the chicken is warm.
