Healthy Chickpea Salad

Ingredients:

  • 2 cups canned chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, feta cheese, and fresh parsley.
  2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the chickpea mixture and toss until everything is well coated.
