Healthy Steak Fajita Roll-Ups

Here’s a healthy steak fajita roll-ups recipe that’s both delicious and nutritious:

 

Ingredients:

  • 1.5 lbs flank steak or skirt steak
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions:

  1. Prepare the Steak:
    • Lay the steak flat on a cutting board. If the steak is too thick, you can butterfly it or pound it with a meat mallet to an even thickness.
    • Season both sides of the steak with salt, pepper, chili powder, cumin, paprika, garlic powder, onion powder, and dried oregano.
  2. Prepare the Vegetables:
    • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
    • Add the sliced bell peppers and onion. Cook until the vegetables are tender and slightly charred, about 5-7 minutes. Remove from heat and set aside.
  3. Assemble the Roll-Ups:
    • Preheat your grill to medium-high heat (or preheat your oven to 375°F if baking).
    • Lay the steak out flat and spread the cooked vegetables evenly over the surface.
    • Starting from one end, roll the steak up tightly around the vegetables.
    • Secure the roll with toothpicks or kitchen twine at 1-inch intervals.
  4. Cook the Roll-Ups:
    • If grilling: Brush the steak roll with the remaining olive oil. Grill for 10-15 minutes, turning occasionally, until the steak is cooked to your desired doneness.
    • If baking: Place the steak roll on a baking sheet and brush with the remaining olive oil. Bake for 20-25 minutes, or until the steak is cooked to your desired doneness.
  5. Serve:
    • Let the steak roll rest for 5 minutes before slicing.
    • Slice the roll into 1-inch thick pieces.
    • Garnish with fresh cilantro and serve with lime wedges if desired.
