Ingredients
1 (16 oz) jar natural peanut butter
1 stick (½ cup) unsalted butter, softened
1 tsp vanilla extract
1 cup powdered sweetener (such as Swerve; can be made by blending granular sugar substitute with cornstarch)
6 oz Lily’s sugar-free chocolate chips
Instructions
Make the peanut butter layer: In a mixing bowl, combine softened butter and peanut butter. Stir until smooth. Mix in vanilla and powdered sweetener until creamy.
Set the base: Spread mixture evenly into a parchment-lined casserole dish. Freeze for 25 minutes until firm.
Melt chocolate: In a microwave-safe bowl, melt chocolate chips in 20–30 second intervals, stirring until smooth.
Add topping: Pour melted chocolate over chilled peanut butter layer. Spread evenly.
Chill: Refrigerate until chocolate is set and firm.
Serve: Cut into squares and enjoy!
