Mediterranean Honey Cranberry Chicken (Tray Bake – Full Recipe) 🍯🍗
Ingredients:

4 chicken breasts or thighs (boneless or bone-in)

2 tbsp olive oil

Salt & black pepper (to taste)

1 tsp paprika
-
1 tsp garlic powder
-
1 tsp dried oregano or thyme
-
1 cup fresh or dried cranberries
-
3 tbsp honey
-
2 tbsp balsamic vinegar or lemon juice
-
3 cloves garlic, minced
-
2 cups sweet potatoes, cubed
-
1½ cups Brussels sprouts (halved)
-
¼ cup walnuts (optional)

Fresh rosemary or thyme (for garnish)
Instructions:

Preheat oven to 200°C (400°F).

Season chicken with salt, pepper, paprika, garlic powder, and oregano.

Heat 1 tbsp olive oil in a pan and sear chicken on both sides until golden (2–3 minutes per side).

In a bowl, mix cranberries, honey, balsamic vinegar, garlic, and 1 tbsp olive oil.

Arrange sweet potatoes and Brussels sprouts in a baking tray. Sprinkle salt & pepper.

Place chicken on top of vegetables.

Spoon cranberry-honey sauce over chicken.

Add walnuts around the tray (optional).

Bake uncovered for 30–35 minutes until chicken is cooked and veggies are tender.

Garnish with fresh rosemary or thyme before serving.
Serve with: rice, couscous, quinoa, or crusty bread.
