Mixed Berry Skillet / Round Cake
Ingredients
Dry
1½ cups (190 g) all-purpose flour
2 tsp baking powder
¼ tsp salt
Wet
½ cup (115 g) unsalted butter, melted & cooled
¾ cup (150 g) sugar
2 large eggs
½ cup (120 ml) milk or plain yogurt
1 tsp vanilla extract
Topping
1½–2 cups mixed berries (blueberries, raspberries, blackberries)
1–2 tbsp sugar (for sprinkling)
Powdered sugar, for dusting (optional)
Instructions
Preheat oven to 175°C / 350°F.
Grease a 9-inch (23 cm) round cake pan or oven-safe skillet.
Mix dry ingredients
In a bowl, whisk flour, baking powder, and salt.
Mix wet ingredients
In another bowl, whisk melted butter and sugar.
Add eggs one at a time, then milk (or yogurt) and vanilla.
Combine
Gently mix dry ingredients into wet until just combined.
Do not overmix.
Assemble
Pour batter into the pan.
Scatter berries evenly on top (don’t press them in).
Sprinkle 1–2 tbsp sugar over the berries.
Bake
Bake for 40–45 minutes, until golden and a toothpick comes out clean.
Finish
Cool slightly, then dust with powdered sugar before serving.
