Savory Garlic Mushroom Chicken with Spinach
Ingredients
For the Chicken:
  • 2 large chicken breasts, halved horizontally (or 4 small chicken breasts)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons olive oil
For the Garlic Mushroom Sauce:
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup (150g) mushrooms, sliced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • ½ cup (120ml) chicken broth
  • 1 cup (240ml) heavy cream
  • ½ cup (50g) grated Parmesan cheese
  • 2 cups (60g) fresh spinach
  • ½ teaspoon red pepper flakes (optional)
For Garnish (Optional):
  • Fresh parsley, chopped
  • Extra Parmesan cheese
Instructions
Step 1: Prepare the Chicken
  • Season the chicken breasts with salt, pepper, and paprika on both sides.
  • Heat olive oil in a large skillet over medium-high heat.
  • Cook the chicken for 5-7 minutes per side, until golden brown and cooked through.
  • Remove the chicken from the pan and set aside.
Step 2: Make the Sauce
  • In the same skillet, melt butter over medium heat.
  • Add garlic and cook for 30 seconds until fragrant.
  • Add mushrooms and thyme, cooking for 5 minutes until the mushrooms are soft.
  • Pour in the chicken broth, scraping the bottom of the pan to deglaze.
  • Reduce the heat and stir in heavy cream and Parmesan cheese.
  • Let the sauce simmer for 3-4 minutes until slightly thickened.
  • Add the spinach, stirring until wilted.
  • If desired, add red pepper flakes for extra heat.
Step 3: Combine and Serve
  • Return the cooked chicken to the pan, spooning the sauce over it.
  • Let it simmer for 2 minutes to absorb flavors.
  • Garnish with chopped parsley and extra Parmesan before serving.
