Homemade school cheese pie and beans, proper rainy day food
School dinners Cheese Pie recipe
Ingredients
- Pastry
- 8 oz of Plain Flour
- Pinch of baking powder
- 2oz of Butter
- 2oz of Lard
- Filling
- 1 small Onion finely chopped
- Pinch of salt
- 2 Eggs
- 1/2 pint of Milk
- 1/2lb of Cheese a good strong mature cheddar is best
- you can add anything else you like to this….our school added chopped carrots and peas to it, other times chopped up ham …anything goes really. )
Method
- Mix the flour, margarine and lard together to form a dough – add a little water to improve consistency.
- Roll this pastry out in to a flan dish and blind bake for about 10 minutes.
- ( Blind baking is when you cover the pastry with baking parchment or greaseproof paper, and cover with some baking beans…if you don’t have any pasta or dried beans or pulses do the same job….don’t chuck them away afterwards ..store them and keep for using again x)
- Add the chopped up onion and grated cheese to the pastry base, covering it all.
- I top the pie with some extra grated cheese.
- Beat the eggs in to the milk and then add this all to the flan dish.
- Bake in oven at 300F/160C for approx. 30 to 40 minutes
