1 POINT CORN SALAD

Ingredients

  • â–¢1 can white corn (drained and rinsed )
  • â–¢3 tbsp light mayonnaise (I prefer Hellman’s)
  • â–¢1/4 cup chopped scallions
  • â–¢1/4 cup diced tomatoes
  • â–¢salt and pepper to taste

Instructions

  • Drain the corn and rinse under cold water
  • Add to a mixing bowl and add in the mayo, scallions, tomatoes, salt and pepper
  • Mix well. This tastes even better after sitting in the fridge for a bit but can be eaten immediately!
