Tomato Mozzarella Basil Toast

Ingredients

  • 4 slices of rustic bread (sourdough, baguette, or country bread)

  • 1–2 ripe tomatoes, sliced

  • 6–8 oz (170–225 g) fresh mozzarella, sliced

  • Fresh basil leaves, torn or whole

  • 2–3 tbsp olive oil

  • Salt, to taste

  • Black pepper, to taste

  • Dried oregano or Italian seasoning (optional)

  • 1 small garlic clove (optional)


Instructions

  1. Preheat oven

    • Set oven to 400°F (200°C).

  2. Toast the bread

    • Place bread slices on a baking sheet.

    • Brush lightly with olive oil.

    • Bake for 5–7 minutes until lightly crisp.

    • (Optional) Rub warm toast with a cut garlic clove for extra flavor.

  3. Add toppings

    • Layer mozzarella slices on each toast.

    • Add tomato slices on top.

    • Sprinkle with salt, pepper, and oregano.

  4. Bake again

    • Return to oven for 8–10 minutes, until cheese is melted and bubbly.

  5. Finish

    • Top with fresh basil.

    • Drizzle with a little more olive oil.

    • Add extra pepper if you like.

  6. Serve

    • Enjoy warm as a snack, lunch, or side dish.
