500 g lean ground beef (95% lean)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup bell peppers (any color), chopped

1 cup zucchini or cauliflower rice

2 tbsp tomato paste

½ cup water or low-sodium beef broth

1 tsp olive oil (optional – you can skip for zero points)

1 tsp paprika

½ tsp black pepper

½ tsp salt (or to taste)

½ tsp chili flakes (optional)

½ tsp Italian seasoning

Fresh parsley or coriander for garnish

Heat a non-stick pan on medium heat. Add olive oil only if needed.

Add chopped onion and garlic. Sauté until soft and fragrant.

Add lean ground beef. Cook until browned, breaking it apart.

Stir in tomato paste, paprika, pepper, salt, chili flakes, and Italian seasoning.

Add bell peppers and zucchini/cauliflower rice. Mix well.

Pour in water or broth. Cover and cook for 8–10 minutes until tender.
