Ingredients

  • 2 medium cucumbers, thinly sliced

  • 3 cups shredded cabbage or iceberg lettuce

  • 1 red bell pepper or tomato, sliced into thin strips

  • 1/4 cup mayonnaise or Greek yogurt

  • 1 tbsp lemon juice or apple cider vinegar

  • 1 tsp garlic powder

  • Salt and black pepper to taste

  • Fresh chopped herbs (dill or parsley) for garnish

Instructions

  1. Prep the Vegetables: Wash and thinly slice the cucumbers and bell pepper, and shred the cabbage or lettuce.

  2. Make the Dressing: In a small bowl, whisk together the mayonnaise or Greek yogurt, lemon juice or vinegar, garlic powder, salt, and black pepper until smooth.

  3. Toss the Salad: Place the prepared vegetables in a large mixing bowl, pour the dressing over them, and toss gently until every piece is evenly coated.

  4. Chill and Serve: Chill in the refrigerator for 15 minutes to let the flavors meld, then transfer to a serving plate, garnish with fresh herbs, and serve cold.
