½ cup heavy whipping cream

½ cup whole-milk ricotta cheese

½ cup shredded mozzarella cheese (plus extra for topping)

Instructions
1. Sauté the Aromatics

Heat a large pot or Dutch oven over medium heat and add the olive oil.

Add the diced yellow onion and sauté for 4 to 5 minutes until translucent and soft.

Stir in the minced garlic, Italian herbs, and red pepper flakes, cooking for about 30–60 seconds until fragrant.
2. Brown the Meat

Add the ground beef (and/or Italian sausage) to the pot.

Season with a pinch of salt and pepper. Cook, breaking the meat apart with a spatula, until completely browned (about 8–10 minutes).

Note: Drain any excess grease if desired, though leaving a little adds richness to the soup.
3. Build the Soup Base

Pour in the beef broth, tomato sauce (or crushed tomatoes), and tomato paste. Stir well to combine.

Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15 to 20 minutes so the flavors can fully meld together.
4. Make It Creamy and Cheesy

Reduce the heat to a gentle simmer. Stir in the heavy cream, ricotta cheese, and shredded mozzarella until completely melted and smooth.

Let it simmer gently for another 3 to 5 minutes, stirring frequently.
