Cheesy Chicken Fajita Casserole

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 tablespoon olive oil

  • 1 tablespoon fajita seasoning (chili powder, cumin, garlic powder, onion powder, salt, and pepper)

  • 1 large green bell pepper, sliced

  • 1 large red bell pepper, sliced

  • 1 large onion, sliced (optional)

  • 1.5 cups shredded mozzarella or Mexican blend cheese

  • Fresh cilantro chopped, for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

  2. Season and Cook Chicken: Toss the chicken pieces with olive oil and fajita seasoning. Sauté them in a skillet over medium-high heat for about 5 to 7 minutes until lightly browned and cooked through.

  3. Sauté Veggies: In the same skillet, briefly sauté the sliced bell peppers and onions for 3 to 4 minutes until slightly tender.

  4. Assemble the Casserole: Transfer the cooked chicken and vegetables into the prepared baking dish, tossing them together evenly.

  5. Add Cheese: Generously top the mixture with shredded cheese.

  6. Bake: Bake in the preheated oven for 15 to 20 minutes, or until the cheese is completely melted, bubbly, and slightly golden on top.

  7. Serve: Garnish with fresh cilantro if desired, and serve hot!
