1 tablespoon fajita seasoning (chili powder, cumin, garlic powder, onion powder, salt, and pepper)

1 large green bell pepper, sliced

1 large red bell pepper, sliced

1 large onion, sliced (optional)

1.5 cups shredded mozzarella or Mexican blend cheese

Fresh cilantro chopped, for garnish (optional)
Instructions

Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Season and Cook Chicken: Toss the chicken pieces with olive oil and fajita seasoning. Sauté them in a skillet over medium-high heat for about 5 to 7 minutes until lightly browned and cooked through.

Sauté Veggies: In the same skillet, briefly sauté the sliced bell peppers and onions for 3 to 4 minutes until slightly tender.

Assemble the Casserole: Transfer the cooked chicken and vegetables into the prepared baking dish, tossing them together evenly.
