  2. Prepare the oven: Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  3. Mix dry ingredients: Whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  4. Cream butter and sugar: Beat the butter, brown sugar, and granulated sugar until light and creamy.
  5. Add eggs: Beat in the eggs one at a time, then mix in vanilla.
  6. Combine: Gradually add the dry ingredients. Fold in the soaked fruit and nuts. If the batter seems very thick, add a little milk.
  7. Bake: Transfer to the prepared loaf pan and smooth the top. Bake for 50–65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool: Let the cake rest in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
