  • 2 cups mixed berries — strawberries, blueberries, raspberries, and/or blackberries

  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice

1. Prepare the Berries

2. Make the Coconut Base

Scoop the thick coconut cream from the chilled coconut milk and place it in a bowl.

Add the remaining coconut milk, honey or maple syrup, vanilla extract, and salt. Whisk until smooth and creamy.

3. Combine

Pour the berry purée into the coconut mixture. Stir gently until the mixture is evenly combined.

Taste and adjust the sweetness if needed.

4. Freeze

Pour the mixture into a freezer-safe loaf pan or container.

Cover tightly and freeze for 4–6 hours, or until firm.

For a creamier texture, stir the mixture every 45–60 minutes during the first 3 hours of freezing.

5. Serve

Let the ice cream sit at room temperature for 5–10 minutes before scooping.

Top with fresh berries and a sprinkle of shredded coconut.
