This quick and hearty skillet meal is a fantastic weeknight dinner option that transforms leftover rice into something delicious. Packed with savory ground beef, colorful bell peppers, tender celery, and topped with fresh green onions, it offers a wonderful balance of savory flavors and textures in every single bite.
Ingredients

1 lb ground beef

3 cups cooked white rice (preferably day-old and chilled)

1 cup bell peppers (red and yellow), diced

1/2 cup celery, sliced

3 stalks green onions (scallions), sliced

2 tablespoons cooking oil or butter

2 tablespoons soy sauce (adjust to taste)

Salt and freshly ground black pepper to taste

Optional: A pinch of garlic powder or minced garlic

Cook the Beef: Heat a large skillet or wok over medium-high heat. Add the ground beef, breaking it up with a wooden spoon, and cook until completely browned and cooked through. Drain any excess grease, then remove the beef from the skillet and set it aside.

Sauté the Vegetables: In the same skillet, add 1 tablespoon of oil or butter. Toss in the diced bell peppers and sliced celery. Sauté for 3 to 4 minutes until tender-crisp.

Add Rice: Turn the heat to medium-high and add the remaining oil or butter to the skillet. Add the cooked white rice, breaking up any clumps. Stir-fry with the vegetables for 3 to 5 minutes until the rice is heated through and slightly toasted.

Combine: Return the cooked ground beef back into the skillet with the rice and vegetables.

Season: Drizzle the soy sauce evenly over the mixture. Season with salt, black pepper, and garlic powder if using. Toss everything together continuously for 2 minutes until well combined and hot.
