Slow Cooker Glazed Beef & Caramelized Onion Bites

🛒 Ingredients
- 2 lb (900 g) beef chuck roast, cut into 2-inch chunks
- 2 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 cup beef broth
- 1/4 cup Worcestershire sauce
- 3 tbsp brown sugar
- 2 tbsp ketchup
- 1 tbsp Dijon mustard
- 1 tbsp soy sauce
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 tbsp cornstarch + 2 tbsp water, optional for thickening

- Brown the beef: Pat the beef dry and season with salt, pepper, smoked paprika, and thyme. Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides.
- Prepare the onions: Add the sliced onions to the same skillet and cook for 5–7 minutes until softened and lightly golden. Add the garlic and cook for another 30 seconds.
- Make the glaze: In a bowl, whisk together beef broth, Worcestershire sauce, brown sugar, ketchup, Dijon mustard, and soy sauce.
- Load the slow cooker: Place the caramelized onions in the bottom of the slow cooker. Add the browned beef on top, then pour the sauce over everything.
- Slow cook: Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is fork-tender.
- Thicken the sauce: For a thicker, glossy glaze, mix cornstarch with water. Stir it into the slow cooker during the final 15–20 minutes on HIGH.
- Finish: Gently stir the beef so every piece is coated in the rich onion glaze. Serve hot.
