Slow Cooker Glazed Beef & Caramelized Onion Bites

  • 2 lb (900 g) beef chuck roast, cut into 2-inch chunks
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup beef broth
  • 1/4 cup Worcestershire sauce
  • 3 tbsp brown sugar
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp cornstarch + 2 tbsp water, optional for thickening

  1. Brown the beef: Pat the beef dry and season with salt, pepper, smoked paprika, and thyme. Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides.
  2. Prepare the onions: Add the sliced onions to the same skillet and cook for 5–7 minutes until softened and lightly golden. Add the garlic and cook for another 30 seconds.
  3. Make the glaze: In a bowl, whisk together beef broth, Worcestershire sauce, brown sugar, ketchup, Dijon mustard, and soy sauce.
  4. Load the slow cooker: Place the caramelized onions in the bottom of the slow cooker. Add the browned beef on top, then pour the sauce over everything.
  5. Slow cook: Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is fork-tender.
  6. Thicken the sauce: For a thicker, glossy glaze, mix cornstarch with water. Stir it into the slow cooker during the final 15–20 minutes on HIGH.
  7. Finish: Gently stir the beef so every piece is coated in the rich onion glaze. Serve hot.
